70% Dark Chocolate with Candied Brazilian Orange Peel

Intense chocolate with pieces of candied orange. Winner of the bronze medal from the Chocolate Academy (2020).

My secret: I take the Bahia orange , peel it and then crystallize the peel. Then I put the crystallized orange peels on top of the chocolate. Something you didn't know: in the 1800s, this variety of orange was taken from Bahia to Riverside, California , and was renamed navel orange (navel orange) . This is how the famous Orange County, Los Angeles region came about.
